This Blanc de Blancs spent 42 months on the lees, combining fine, persistent mousse with precision and depth. Maturation in stainless steel (85%) and small barriques (15%) lends the wine a clear, cool structure and a subtle sense of breadth.

An elegant match for baked zucchini blossoms, air-dried ham with melon, or a delicate tart with onion confit and fresh marjoram.

In the nose, lifted aromas of quince blossom and lime peel, with a subtle hint of hazelnut. On the palate, lively and linear, carried by a fine, persistent mousse. Gentle spice, a delicate creaminess and a long, dry finish with cool minerality complete the picture.
